A Few Quick Tips for Using the Nesco American Harvest FD 1010 Gardenmaster Food Dehydrator to Make Jerky:

  • Select lean meats that have very little fat.  A lean round or flank steak will make wonderful beef jerky.
  • Typically 3 lbs of raw meat will make about 1 lb of jerky.
  • You can make jerky from a variety of proteins including: wild game, poultry and fish.
  • When preparing the meat for drying, remove all fat.
  • Cut meat in thin uniform strips so that it will all be able to dry within the same period of time.
  • When cutting your strips of meat, cut across the natural grain as this will produce jerky that is easier to pull apart when eating.
  • If the jerky will not be consumed within 1-2 weeks, be sure to refrigerate or freeze in order to keep fresh until eaten.

What is Jerky?

Jerky is a type of meat that has been prepared in such a way as to make it a great snack of a salty, sweet or savory variety.

Jerky is made by trimming the fat off of meat and cutting it into thin slices. The meat is then marinated in different types of special jerky seasonings, spices or sauces before being smoked or dried. The marinating process could take anywhere from 1-2 days, depending on the strength of flavor that you are going for. Once the jerky is finished, it does not need to be refrigerated at all. For much of history, drying meat in this way was the only safe way to preserve it.

The term “jerky” means to burn and jerky can be made from different meat sources, such as beef, venison, elk and any number of others. Beef jerky is probably the most common of jerky products that are sold within the United States. This can be a great high protein snack.

Making the jerky is actually a pretty fast process. Once the meat is placed into the dehydrator it can take anywhere from 2 to 6 hours. Be sure that the meat is no longer raw or pink at all before you remove it from the dehydrator.

Once the jerky is completely you should place it in plastic bags to refrigerate or freeze. If you want to store the jerky for longer than a few weeks, jar storage is best. The jerky can be safely kept in closed jars for months with no problem
